If this has all left you a bit confused, you're in good company. This lesson will show you how to take a targeted, quality-focused approach to dietary fats. | Essential Ideas From The Video | • Even the leanest person has plenty of stored body fat. The average man has about 100,000 calories of stored fat, as compared to the 1,500-2,000 calories known as glycogen, or carbohydrates. This stored fat is crucial! It insulates and protects your vital organs, and it's also your body's primary source of energy at rest and during low-intensity exercise. • Like protein, fats are also part of who you are. Body fat helps form cell membranes and is a major part of many organs, including around 60 percent of your brain. • Fatty acids also act as cellular messengers, helping proteins do their jobs, and helping you store and process essential nutrients and vitamins. They're also essential for regulating levels of hormones such as testosterone—low-fat diets have been connected with decreased testosterone levels. • Saturated fats come primarily from animal sources like meat and dairy products, and some tropical nuts like coconuts. Another way to remember this is that they are all fats that are solid at room temperature. • Polyunsaturated and monounsaturated fats more often get labeled &#34;healthy&#34; fats. We get these from nuts and seeds, certain vegetables like avocados or olives, and fish. • Trans fats are naturally occurring in small amounts, but the artificial variety has been connected to a number of series health issues and is best avoided. • The difference between all of these fats isn't dramatic, it's just a carbon molecule here or there. Fats are more similar than they are different, and when it comes to adding fats to your diet, the differences only become problematic when you dramatically over-rely on one type or another. • The same goes for omega-6 and omega-3 fats. Omega-6 fats, which are located in abundance in many meats, vegetables, grains, and oils, have important health properties. But when we eat them to the almost total exclusion of omega-3s, as many people do, then they end up negating the good effects of omega-3s. In that case, the omega-6s can end up potentially causing inflammation and other problems. • A good goal, for health and performance, is to get away from a 10:1 omega-6 to omega-3 ratio and strive for more like 4:1. It's also good to tip the scales more toward unsaturated fats and polyunsaturated fats, eating them about twice as much as you eat saturated fats. • A simple approach that allows you to get maximum benefits from healthy fats is to get most of your fat from non-meat sources like nuts, seeds, and vegetables, and have some at most meals. Eat fish 2-3 times a week if your diet allows it, and add a thumb-sized portion of oil, nuts, or avocado to meals regularly. • Rather than obsessing over types of fat, simply know your best fat sources, and prioritize them when you assemble your meals every day. So, let's try to provide a little clarity, and try to help you make the most of the information that's on a food label. | Essential Ideas From The Video | • The calorie is not a universally accepted system of measurement. But every point made about it in this video can also be applied to other measurements like joules, kilojoules, or kilocalories. • The biggest advantages to calories are that they give you an objective way to measure very different meals, and to make more informed decisions about portion sizes. This can be helpful because portion size has increased immensely in restaurants and homes in recent decades. • Calories can also help you see how small indulgences, like a daily soda pop can add up over time. One soda a day is enough extra calories to add 15 pounds of weight in a year! • Beer, wine, cocktails, and coffee drinks may not have food labels, but they're definitely not calorically &#34;free.&#34; • A major downside to calorie counting is that it's never totally accurate, even if you take the number on the label as gospel. •Packaged foods have been shown in research to have a lot of variability in caloric accuracy. It's normal for them to underreport both carbs and total calories by 25, or even up to 95, percent. • Another flaw in calories: Digestion is highly complicated and personal, and the number you eat is never exactly the number your body absorbs. Hard-to-digest foods like meat and nuts can increase inaccuracy by another 25 percent, or more. • A final flaw: As soon as people start counting calories, they often start cutting them—often too low, and without taking enough care where they're cutting from. Getting too few calories, for too long, is a big problem that can make it harder to maintain a healthy body composition, leave you feeling awful, and put you no closer to your goals. • So, what's a better way to get the benefits of calories? First, by sticking primarily to whole foods, you'll avoid the calorie inaccuracies that are common in processed foods. Second: Don't just exercise to burn calories. Why? You burn far less than you think, even in intense training, and judging your training by how many calories you burned is just a good way to end up hating exercise. • Think portions, not just numbers. In future videos, we'll show some hands-on ways to measure portions. You can also control portions with how you eat; research says to eat slowly, off of a plate whenever possible, and have a plan rather than making decisions on the fly. •If you've been counting calories forever, you don't need to stop. Just consider it one measurement among many. You don't use these as fuel, but if you're not getting enough of them, you'll definitely feel the effects. • Healthy diets of all types share a few unifying characteristics. Let completely cool and enjoy! The smaller the tray, the thicker (higher) your bars will be, so select the size that coincides with your desired thickness. Spread it evenly on the sheet and pat it down so it is packed in. Place in the freezer as you prepare the chocolate. 4. Place chocolate bar (or chunks) in a microwaveable-safe bowl and microwave for 1-2 minutes until melted. Remove the tray from the freezer and evenly spread the melted chocolate on top of the mix. Sprinkle coarse sea salt on top of the chocolate, if desired. 5. Place in the freezer for 1 hour (or fridge for 2 hours), then remove and cut into desired portions. Store in an airtight container in the fridge for 2 weeks or freezer for 1 month. 6.
